Kitchen Fairy

I often joke about wishing the 'kitchen fairy' would clean up the kitchen mess after a meal.
Turns out... I have one.  {kind-of}

It's more like having a personal chef in the house.
Of course, you have to help a lil' bit by chopping a few things from time to time, but still...  after that, the rest is up to the chef {aka the crockpot}.

This week, I'm participating in Linda's Fall Into Flavor meme.
I know everyone probably has a favorite chili recipe, but I think it is the
'no meat' and cilantro that I love about this.


Black Bean Chipotle {Vegan} Chili
{Don't be afraid.  My meat and potatoes man really liked it.  Besides, you could always add meat if you wanted.  I'm flexible.}



2 cans diced tomatoes {with green peppers and onions- undrained}
1 cup salsa {I used a pineapple blend}
2 -15 oz cans black beans - rinsed and drained
1/2 cup chopped {red} onion
1 tsp. minced garlic
1 tbsp. chili powder
1/2 tsp. ground cumin
1/2 tsp. chipotle pepper powder or sauce
Add  vegetable broth if you like your chile with more liquid
Salt to taste
Garnish with {fresh} cilantro

Combine all ingredients {except cilantro} in slow cooker.
Turn on low and cook for 6-8 hours.
If using cilantro, stir in just before serving.

We toasted corn tortillas to go along with it.
I top mine with avocado too.

As my girls say,
"Easy peezy-lemon squeezy!"
Little to clean up!  Yay!
So easy, I feel like I'm cheating in this meme a lil' bit. ;)
It's all about efficiency, right? 

If you wanted it to be healthier, you could cook your own beans and prepare the tomatoes as well.  It's crossed my mind.  I don't like using a lot of cans.  I know.  Just another one of my quirks.

You could also top it off with some of your faves... feta, cheddar, sour cream, etc. AND yummy homemade cornbread.
I can't.  Well, I could but let's just say that I might as well order it like this...



Maybe next week I'll contribute a thunder-thigh recipe.

    The recipe looks fabulous. My husband prefers vegan and if he had his way, we would make the transition for real. I will add this in my vegan recipe collection for the days we go "meatless".

  3. What a great commercial! I miss those :-)

    Anyway, recipe sounds wonderful too and I'll put it on my list to try. Once we get past the high 90s and low 100s (opposite seasons you know). Love chili but not in this kind of weather!

    Have to cook my own beans; can't buy canned black beans here. Which is fine; prefer my own anyway :-)

  4. This recipe sounds really good, especially because it doesn't have the meat!!! (andno I'm not a vegetarian) I prefer chili without the meat. I love my crockpot also!
